You can’t get bagel outside of New York City.
Oh you can buy a round piece of bread with a hole in it. It may even claim to be a bagel. But same ingredients or not, it bears a pale resemblance to a real New York bagel. Believe me; I’ve tried to find bagels elsewhere. From other cities in the States, to cafes in South America, and even in Europe. It just can’t be done.
They say it’s the water. Whether it’s the water, the air, or just the general energy in New York a true bagel does not exist outside of the city.
I dream about good New York bagels. More specifically, I dream of a particular bagel. The best bagel in New York. The Super Heebster: Russ and Daughter’s superstar bagel.
Russ and Daughters is an unassuming little deli in Manhattan’s Lower East Side. It is so tiny there isn’t even room for a dining area. Just a deli counter customers can step up to and place their take-out orders. That doesn’t prevent the store from always having a line. The tiny deli has been in business since 1914 and crafts some of the best bagels, spreads and sandwiches known to man.
Take a number and wait your turn in the tiny little store and watch the servers sculpt their sandwiches. When your number is called quickly give your order: the Super Heebster on an everything bagel.
The bagel is literally hollowed-out so that more fillings can fit on it. One side of the bagel the deli server slaps a schmear of horseradish dill cream cheese, over that she spoons wasabi flying fish roe. Yes, you heard right. The fish were clearly fed a steady diet of wasabi to produce the bright green salty little bursts of wasabi. Or at least that’s what I choose to believe… it sounds much better than curing roe in wasabi. Then she spreads a thick layer of whitefish and baked salmon salad, filling up the other side of the bagel. Finally the server puts the two bagel halves together, slices the creation in half and hands it to the lucky patron.
The Super Heebster on an everything bagel is unquestionably one of the most delicious meals in all of New York City and consequently the world. The bursts of wasabi roe combining with the subtly spicy cream cheese and melding with the delectable baked salmon salad is the pinnacle of bagel excellence.
