Lobster spread

Our hunter-gatherer captain was truly a lobster-hunting machine.  He went night diving, day hunting and made a point to search under every rock, coral reef, shipwreck, and possible home for lobsters.  They didn’t stand a chance and it wasn’t long before we had a well-stocked freezer.


We feasted on boiled lobster with butter and lemon juice until we had eaten our fill.  Though I love straight lobster as much as the next person, I was soon thinking of other ways to prepare the little coruscations.  One of my most successful and tasty creations was this lobster spread.  Not only that but it can be used in any number of dishes.  From quick and easy watch-snacks, to more elaborate sit-down dinners we used the spread in all sorts of ways.  We used it as filling for lobster quiche, lobster quesadillas, slathered over crackers and on and on.


I highly recommend blending up a batch for yourself.  You can use any type of lobster, crab, or whatever other type of coruscation is on hand.



1 package Philadelphia cream cheese

1/4 c lemon juice

3 T milk

3 cloves of minced garlic

1 T salt

3 or 4 steamed rock lobster tails (about 2-3 lb lobsters)


–          Steam lobster tails

–          Place ingredients into a food processor and puree.  I like it smooth, but other people enjoy their spread a bit chunkier, it is really to your taste.

–          Chill in refrigerator for a day (if you can wait that long)

–          Enjoy!
